I would like to visit an authentic sake brewery and not a tourist trap. Which one would you recommend?

You don't say where in Japan you might like to visit a sake brewery but here are a few outside Tokyo:

There are Saka-gura (Sake Brewery) street in Saijo-shi, Higashi Hiroshima.

You can see some shop on weekend.

I'm not sure exactly what constitutes as a "tourist trap" brewery versus an "authentic" brewery, but the designated top three are the Fushimi area's sake breweries in Kyoto, Nada sake in Kobe, and Saijo sake in Hiroshima Prefecture.
