We are planning to travel to Kanazawa from Tokyo on the 12th Aug . Should we be booking our tickets before we arrive in Tokyo on 8th Aug ?

Hi

I am guessing that you will have a JR PASS and will be using it to get to Kanazawa? If yes, then wait till you get into Japan and then get your ticket from Tokyo to Kanazawa after you get in. Because you are going on a weekday, it is unlikely for the train to sell out before you get in. Even without a JR PASS you can still wait till you arrive in Japan.

Trains will tend to fill on weekends and around holidays. FYI

Have fun in Japan.

I am a Japanese so I cannot do it by myself, but the link below explains how to reserve seats via the internet.

If it were JR-East operated, the JR East train reservation site is useful.

Further, according to the jprail.com site shown above, if you understand Japanese or have a Japanese acquaintance who can assist you, you can book seats and receive it afterward.
