If normal webpages for hotels donft give you results, try with Jalan.

Is it walkable in one day?

Yes, the Yamanobe-no-michi is usually walked in a day. I walked the trail a couple of years ago in a day. It is not a difficult walk. I recommend starting early if you want to stop at the temples, shrines, kofun, etc. along the way, especially if it is in the winter when the days are shorter.
